Ingredients:
For the cupcakes:
1½ cups all-purpose flour,
4 tbs Nutrifres Lemon fruit juice concentrate
1½ teaspoons baking powder
¼ teaspoon salt
½ cup butter (room temperature)
½ cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
½ cup whole milk
For the frosting:
½ cup butter (room temperature)
1½ cups confectioners’ sugar
2 tbs Nutrifres Lemon fruit juice concentrate
¼ teaspoon salt
How to make it
STEP 1 Make the cupcakes: Heat oven to 180° C. Line a standard 12-cup muffin tin with paper liners. In a medium bowl, whisk together the flour, Nutrifres Lemon fruit juice concentrate, baking powder, and salt; set aside.
STEP 2 Using an electric mixer, beat the butter, sugar, eggs (one at a time) and vanilla on medium-high until fluffy.
STEP 3 Reduce mixer speed to low. Slowly add flour mixture, alternating with milk. Mix just until combined (do not over mix).
STEP 4 Divide the batter evenly among the muffin cups. Bake until a toothpick inserted in the center comes out clean, 15 to 20 minutes.
STEP 5 Make the frosting: Using an electric mixer, beat the butter and sugar together until smooth. Beat in the Nutrifres Lemon fruit juice concentrate and salt. Frost the cupcakes.
